Fooling Around in the Kitchen
I'm procrastinating right now from my very long list of things to do. But I am the cooking mom for my daughter's preschool class tomorrow so technically this was on my list to do today...just really far down. But since it's lunch time, I'm accomplishing 2 tasks at once. Ahh...the life of moms...
So the skill set is rolling out dough and using cookie cutters. My personal requirement...finding a pretty natural recipe with hopefully no extra added sugar. So...I found this homemade tortilla recipe. Never made homemade tortillas before and was surprised how quick it was.

EASY HOMEMADE FLOUR TORTILLAS
3 cups flour
1 tsp. salt
1/3 cup vegetable oil
1 cup warm water
Combine all the flour, salt, vegetable oil, and water until it forms a dough.
Roll the dough into a big ball and take about an 1 to 2 inch pieces off. Pat the dough flat with your hands or take a rolling pin and roll into circles.
Put the dough on a flat pan on the stove and let the sides cook until there are little brown specks on both sides like you would see on other tortillas.
For snack tomorrow I thought the kids could add grated cheese and avocados. For our lunch we put in smashed chickpeas, parmesan cheese and avocado. The kids had fruit on the side and I had a helping of last night's spinach salad with carmelized onions, toasted almonds and blu cheese...yum..all my favs!!
3 Things I'm grateful for:
1. A day off to get caught up
2. A stocked pantry and left over spinach salad
3. Kids willing to try something new for lunch
